Can you play ps2 games if you replace the hard disk drive from the ps3 fat with more memory?

I was wondering before I buy a PS3 fat can I still play PS2 games on it if I replace the hard disk drive with a much more larger capacity such as a 120 GB or 160 GB. And is the backwards compatilty built in the processor or in the hard disk drive?
